This Week's Harvest

Stripey butternut squash, sungold tomatoes, soldaki tomatoes, and merlot bell peppers. Yum!

This summer has been extremely hot and dry, causing many of the tomatoes to split. I’m a “tough love” gardener (aka lazy gardener) and I don’t like to baby my plants too much with lots of extra watering, but this summer, it has been necessary. Sungold tomatoes, are super sweet and so easy to pop in your mouth that I have already eaten most of them, but I hope to make the others into a nice tomato sauce. Roasted butternut squash is one of my favorites, so I’m sure roasting is in the future for these beauties!

  1. The spaghetti squash wasn't pictured - but our dinner was delic! Using spaghetti squash as an alternative to actual spaghetti is genius only nature could have come up with :) Can't wait for more dinners!
